Hatem,
a native of Port Said, Egypt, is a self-taught chef with no formal
training. He is a man with a mission to bring the cuisine and culture
of the greatest civilization the world has ever known to the sophisticated
palates of the San Francisco Bay Area. In 1999, Chef Hatem opened
Al Masri. Today, Hatem holds a coveted reputation for authenticity
while striving to revolutionize modern Egyptian cuisine.
Hatem’s recipes create the aromatic
character that accents his signature dishes and defines the region
of origin. His menu offers a mixture
of all the elements that comprise Egyptian cooking. The meat dishes
of Cairo, the lovely vegetarian creations of Egypt’s Coptic
Christians, and the sophisticated court cuisine of Alexandria to
Upper Egypt. “Of course cuisine began in Egypt. We invented
the oven in the 18th Dynasty,” he says proudly. Hatem holds
a Ph.D.
